Microgreens
Microgreens are considered 'baby plants' falling somewhere between a sprout and a young plant. They are harvested after the first leaves (cotyledons) develop or at the first true leaf stage. At this time, they are about 2-3 inches tall and only 1-3 weeks old, depending on the variety.
